6. Three Ingredient Roast

This one might take the cake as my favorite of all the crock pot recipes on the list, and that’s simply because there are three, just THREE ingredients.

  • 2 pounds of beef roast (Preferably, look for a chuck roast or rump roast. It should have small ribbons of fat, not large chunks.)
  • 1 can cream mushroom soup
  • 1 packet onion soup mix

Place your beef roast into the slow cooker and pour in one can of cream of mushroom soup (no water added), and then sprinkle one packet of onion soup mix on top. Cover and cook on LOW for approximately 8 hours.

Serve in sandwich rolls (with or without cheese) or with a few of your favorite sides (mashed potatoes, veggies, salad, toast, etc.). You can also add chopped potatoes, carrots and/onions to the roast at the beginning to have a whole ready-to-eat meal straight out of the pot.

7. Shredded Chicken Tacos

Did someone say Taco Tuesday? You can do tacos any day with my personal favorite go-to chicken taco recipe.

This is one of the easiest crock pot recipes you can find, because it’s only five ingredients with almost ZERO preparation. Simply dump, cover and walk away. We pretty much eat this weekly in the Lamm household, and I have a strong feeling you soon will too!

Here’s what you’ll need:

  • 3-4 boneless skinless chicken breasts, trimmed and ready to go
  • 1 jar of chunky salsa—any kind you like.
  • 1/2 packet of taco seasoning
  • small handful fresh cilantro chopped
  • 2 limes for squeezed juice

Place your chicken in the slow cooker and sprinkle the taco seasoning over it. Add, your salsa and cilantro, then squeeze the limes over top. Cover and cook on LOW for 6-8 hours, or HIGH for 4 hours. Shred chicken in crock pot, and serve on tortillas, over chips, in taco shells or even on it’s own with all of your favorite taco toppings.

8. Cheesey Chili Macaroni Soup

This is another fall favorite for ALL the right reasons. First, because it’s chili, and what better dish can you make in the fall than a hearty bowl of chili? Second, because it’s another one of those crock pot recipes that I can modify during hunting season and take advantage of all that tasty, lean venison my husband is bringing back from the woods.

Here’s what you’ll need:

  • 1 Pound Lean Ground Beef
  • 1 Large Onion, Diced
  • 1 15 Ounce Can Tomato Sauce
  • 1 15 Ounce Can Diced Tomatoes
  • 3 15 Ounce Cans Chili Beans
  • 3 Cups Beef Broth
  • 2 Cups Macaroni, Cooked
  • 1 1/2 Cups Shredded Cheddar Cheese

You’ll also need spices:

  • 1 Tablespoon Chili Powder
  • 2 Teaspoons Garlic Powder
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Hot Pepper Sauce, Optional

Start by browning the ground beef in a large skillet over medium heat along with the diced onion until no longer pink. Drain grease if necessary.

Add the beef mixture to the bottom of your slow cooker along with the tomato sauce, diced tomatoes, chili beans, beef broth, and seasonings.

Cover and cook on low for 6-8 hours or on HIGH for 3-4 hours.

Before serving, add the shredded cheese and cooked macaroni and stir well.

9. Parmesan Herb Chicken + Orzo

This crock pot recipe is a slow and effortless way to get a hearty home-cooked meal without the hearty effort.

Here’s what you’ll need:

  • 4 boneless skinless chicken breasts
  • 3 teaspoon Italian seasoning, divided
  • 3 cups low sodium chicken broth
  • 1 1/2 cups orzo pasta
  • 4 tablespoons butter, melted
  • 1 cup sliced mushrooms
  • 1 medium white or yellow onion, finely chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1/2 cup shaved or finely shredded parmesan cheese
  • freshly cracked black pepper and herbs (such as thyme or parsley) for garnish

Start by seasoning the chicken with some of your Italian seasoning, salt and pepper, then cook in a large non-stick skillet until browned on both sides (about 1-2 minutes). Transfer chicken to slow cooker, adding chicken broth, butter, mushrooms, onions, garlic, and salt and pepper to the crock pot.

Cover and cook on HIGH for 1-2 hours or on low for 3-4 hours. Stir in orzo, cover and cook for another 30-45 minutes on HIGH.

Uncover and use a fork to pull chicken out of the slow cooker. Stir contents of slow cooker, then return chicken to slow cooker, on top of the orzo mixture.

Sprinkle parmesan cheese over chicken. Cover and cook until cheese is melted, about 5-10 minutes, then serve.

10. Crock Pot BBQ Chicken

Who needs KFC when you can have down-home southern comfort food straight out of your slow cooker? All it takes is six ingredients and some love.

Here’s what you’ll need:

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • ¼ cup Italian dressing
  • ¼ cup brown sugar
  • 1 tbsp Worcestershire sauce
  • salt to taste

Start by seasoning your chicken breasts lightly with salt and placing in the slow cooker. In a mixing bowl combine BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Stir until well combined. Then pour the sauce over your chicken and cook on HIGH for 3-4 hours.

When you’re ready to serve, you can either pull apart the chicken for shredded BBQ, or serve the whole breasts. If shredding, pull apart the chicken and then re-cover crock pot for another 15 minutes. Serve on buns, over rice, in wraps, on a salad or eat a plateful as is!
